Ingredients:
Wraps OR make a grain bowl instead
Hummus (I like garlic flavored)
1 can of chickpeas, rinsed
*Optional vegan chicken like this Planted marinated chicken (or if you don't have access try my popcorn cauliflower or brown some tempeh in oven or pan)
*Optional bread for homemade croutons (I skipped this step but they are tasty!)
Dressing:
1/2 package of tofu (silken is best)
1/2 cup of nutritional yeast
small spoonful of mustard (dijon or spicy brown is best)
splash of apple cider vinegar
1 large clove of garlic
squeeze of 1/4 of lemon
drizzle of maple syrup to taste
s&p to taste
Instructions:
Blend all of your dressing ingredients in blender (if you don't have access to a blender stir all ingredients vigorously, making sure to mince or grate the garlic on cheese grater).
*If you are making croutons cut bread into cubes, drizzle with olive oil and s&p on both sides, and pop in the oven on broil on a pan for just a few min (keep an eye on burning).
Spread hummus in the middle of the wrap and pile kale on top. Rinse a handful of chickpeas and put on top of kale. Add your *optional chicken/meat choice, sprinkle with cheese, *optional croutons, and drizzle with good amount of caesar dressing. Wrap up tightly, slice in half if you want, and enjoy!
Save the leftover dressing in your fridge for up to a week.
