Crispy Tofu, Tomato, & Arugula Panini Melt

Empty water from tofu package and gently press out excess water. Slice tofu into 1/4 inch thick slabs and cook on a pan (pressing down with a lid) or panini press for a few minutes so that the tofu browns on each side. Set tofu aside.

Spread mayo and hot sauce on each side of bread followed by vegan cheese, tofu, arugula, tomatoes and pickles. Drizzle dressing and then place second piece of bread on top.

Place sandwich on a pan using a lid to press down and flatten it, or use a panini machine. Add more hot sauce if you like spicier and enjoy! I like mine with a side of salad (Trader Joe's salad kits are my favorite).
