Trader Joe's Mediterranean Bowls


Makes enough for 1-2 people


Ingredients:

(all purchased at Trader Joe's- links to products included)

  • Handful of spinach

  • Microwave packet of grains (Trader Joe's)

  • 6 cherry tomatoes, chopped

  • 1/2 bell pepper, chopped

  • A few marinated artichokes (Trader Joe's)

  • A few olives (I like pimento or kalamata)

  • A few spoonfuls of canned Cumin & Parsley Chickpeas (Trader Joe's)

  • A few spoonfuls of canned Grecian Style Eggplant (Trader Joe's)

  • Drizzle of Creamy Vegan Dill Dressing (Trader Joe's)

  • Plain hummus (Trader Joe's)

Instructions:

(If making tofu, preheat oven to 400F. Drain tofu, pressing out excess water with a paper towel, and chop into cubes. Place on baking sheet tossed in olive oil and s&p. Bake for 20-25 min until browned.)


Add greens and grains as base of bowl first. Follow with remaining ingredients, piling each section on in a circle. Add dollop of hummus and drizzle with the dressing last. Enjoy- makes a great healthy lunch or dinner for 1-2 people!



The debate for what diet is best will never end. Cut out carbs. No, cut out sugar & dairy. No, cut out oil and all fats. It's designed to make you so confused, you give up. But then why sometimes, do people feel SO good when they do strict dieting? Paleo, Vegan, Keto, Mediterranean, Gluten-free, Atkins, etc. Maybe its because the diets have more in common than they are different. Reducing processed gluten and dairy filled sugary food and therefor leaving more room for plant whole foods. On a map of the "blue zones" of the world (the locations with longest life span) the cultures are all eating a plant-centered diet filled with beans or legumes. In Japan- tofu. In Costa Rica- black beans In Greece- the chickpea. The Mediterranean way of eating does just that. It's colorful, its flavorful. It focuses on living on off the earth, instead of living off a vending machine. Roasted vegetables in herbs, tahini, chickpeas, and whole grains. There's a lot to be impressed by when it comes to their eating habits. Just like trendy diets, we are all more alike than we are different. And this bowl has been one of my favorite ways to get a quick healthy plant-filled meal, with minimal dishes involved. All put together with some of my favorite products from Trader Joe's.
