Ingredients:
Spinach or any greens
Strawberries
Any grains (I like the quinoa & brown rice packets that microwave in 90 seconds)
Avocado
Small (depending on portion) handful of basil or mint- I like both
Any nuts (I like walnuts and toasting them on a pan over medium heat for a few minutes)
Optional vegan cheese like Violife feta
For dressing:
just drizzle a little olive oil with s&p
OR
1 glug of olive oil mixed
Equal parts vinegar as olive oil (I like apple cider vinegar)
Spoonful of maple syrup
1/2 a spoonful of dijon mustard
s&p
Instructions:
Arrange everything in a bowl, pour dressing over, and serve mixed or unmixed!
