PB&J French Toast


Ingredients:

Whole grain bread like Dave's Killer Bread

Vegan butter like Earth Balance for the pan

Natural PB

Your favorite jelly

optional fresh fruit like strawberries


For the batter;

1 cup of any plant milk I like vanilla almond milk

1/2 tbsp of flax

1 tsp of vanilla

1 tsp of baking powder

sprinkle of cinnamon

drizzle of maple syrup

2 tbsp of cornstarch if you have it or arrowroot powder

optional sprinkle of nutmeg



Instructions:

Add and mix all batter ingredients in a large bowl or grab a large baking dish to spread out batter so you can do multiple slices at once. Put a large pan on the stove over medium heat with a good amount of vegan butter and allow it to melt. Dip a slice of bread and cover both sides in batter and place on the pan- a few minutes a side until it browns.


I like stacking slices with PB & J smeared in between, adding a handful of fresh sliced strawberries, then drizzling with maple syrup and a sprinkle of powdered sugar. Serve and eat right away while warm and enjoy!
