Oat Pancakes w/ Blueberry Syrup


(makes enough for 2 people so feel free to double)


Ingredients:

1/2 cup of oats or oat flour (oat flour works better for me but you can swap for reg flour too)

1/2 a mashed banana

a little of any plant milk for mixing and thinning batter

1 TBS of melted vegan butter

1 scoop of peanut butter or any nut butter (optional)


Blueberry Syrup;

Blueberries

Maple syrup


Instructions:


Make chia or flax egg first and melt your vegan butter.


Mix all ingredients in a bowl until you get a pancake batter consistency, adding a little milk as you mix. Cook over medium heat on a griddle or pan with some vegan butter. Flip and cook each side.


For the syrup just heat up blueberries and maple syrup on low heat in a sauce pan until it gets gooey. Drizzle syrup over pancakes. Option to serve with a drizzle of canned coconut milk or a dollop of vegan yogurt.
