Mediterranean Cous Cous Salad


Ingredients:

  • 1 cup of any couscous (I prefer whole wheat like this)

  • 1 chopped bell pepper

  • 1 handful of chopped red onion

  • 2 handfuls of chopped cherry tomatoes

  • Small handful of chopped basil

  • Small handful of chopped parsley

  • Handful of sliced or slivered almonds

  • Optional sliced greek/kalamata olives

  • s&p to taste

  • optional hummus on the side or drizzle of olive oil for serving

Instructions:


Cook the couscous following box instructions. While it cooks, chop your veggies and herbs. Set couscous aside to cool or pop in the fridge for a few minutes. Add all remaining ingredients to couscous gently tossing until everything is mixed in, adding s&p until desired taste.


I like serving with a dollop of garlic hummus and additional sprinkle of basil.
