Loaded Sweet Potato Nachos


Ingredients:

  • 2 medium sweet potatoes

  • Taco seasoning (or spices like: chili powder, cumin, garlic powder, onion powder)

  • 1/2 a medium onion

  • 1 pepper

  • Cilantro

  • 1 can of black beans, rinsed

  • Garlic powder

  • Onion powder

  • Cherry tomatoes

  • Avocado

  • Vegan sour cream like this

  • Squeeze of lime

  • Olive oil

  • Optional salsa


Instructions:

Pre-heat the oven to 400F. Slice potatoes into small wedges and place on a baking sheet, drizzling with a little olive oil and sprinkling with taco seasoning. Bake for about 30 min or until desired crispy-ness.


While those bake sauté onion and peppers in a skillet over medium heat with a little olive oil, and garlic powder and onion powder to taste. Once peppers are cooked mix in rinsed black beans and turn heat off.


Serve by placing potatoes down first, followed by beans peppers and onions. Then adding sliced avocado and cherry tomatoes. Lastly a dollop of vegan sour cream and optional salsa, garnishing with fresh chopped cilantro and a squeeze of lime.
