Ingredients:
Sweet potatoes (1 per person)
kale or spinach
onions
peppers
1 can of black beans
taco seasoning
Sauce:
Vegan mayo
hot sauce of choice
lime juice or water for mixing
Toppings:
Optional tomato and/or avocado
Instructions:
Preheat oven to 425. Give the whole potatoes a stab with a fork and pop them in the oven for about 45 min or until soft.
Sauté some kale, onions, and peppers in a pan over medium heat until onions are soft. Mix in a can of rinsed black beans and some sprinkles of taco seasoning.
Take potatoes out, cut them in half, and mash a little with a fork. Fill with kale mixture and add your sauce and toppings.
