Garlic Butter Noodles w/ Toasted Walnuts & Fresh Arugula


For the noodles:

Any pasta- I like to use chickpea, lentil, or brown rice noodles

Vegan butter or olive oil

Garlic powder or garlic salt to taste

Onion powder to taste

Salt & pepper to taste (less salt if you used garlic salt)

Nutritional yeast to taste *optional (I like it for a cheesy flavor)

Add any remaining ingredients you want I did:

Toasted walnuts

Fresh arugula

Vegan parm

(I also love fresh cherry tomatoes)


Cook the pasta following box instructions, drain and put back in the pot. Add all noodle ingredients mixing until butter melts & noodles are fully coated. Pour into a bowl and eat plain or add any remaining ingredients you want.

I did fresh chopped arugula, toasted walnuts (just toast in frying pan over medium heat for a few min), cherry tomatoes, and vegan parm.

Serve warm and enjoy!
