Garlic Broccoli Rice Bowl w/ Spicy Mayo


For the broccoli:

1 head of broccoli

1 dollop of vegan butter

garlic powder to taste

onion powder to taste

1/4 cup of nutritional yeast OR vegan shredded cheese OR both

splash of apple cider vinegar

s&p to taste

*optional 1 can of rinsed chickpeas

Serve with:

Any grains (choose 90 second rice packets for a quick meal)

Vegan mayo

Siracha or any hot sauce

*Optional garnish with hemp seeds


Cut broccoli into florets and drop into a large pot of boiling water, cooking for 5 min until mostly soft. Drain water and put back into pot. Add remaining broccoli ingredients, keeping heat on simmer so the butter melts.

Serve with any cooked grains and drizzle with mayo & choice of hot sauce. Optional garnish with hemp seeds.
