Any bread (I like fresh sourdough or any sprouted grain bread)
1 small sweet potato
Any greens (I like spinach, arugula, or dinosaur kale )
Slice sweet potato to make long thin sandwich sized pieces (like you would slicing pieces of cheese or turkey). You want about 3 stacked slices a sandwich or however many will fit on your bread. Cook on medium heat in a pan, flipping to cook each side, OR just drop in boiling water and boil until soft (about 10 min).
Spread mayo on both sides of bread and mash avocado on one of the sides, sprinkling with s&p. Add cooked sweet potato slices followed by thinly sliced red onion and any greens of choice.
Enjoy warm or pack up and save for later to eat cold!
