Makes about 4 servings
For the pasta:
1 box of angel hair pasta like this (or any pasta you like)
2 tbsp of vegan butter (or swap for olive oil)
1 tsp of garlic powder (more to taste)
1/2 tbsp of onion powder (more to taste)
2 tbsp of nutritional yeast
s&p to taste
optional dark leafy greens like arugula or spinach
For the cauliflower:
1 large head of cauliflower, cut into small florets
good drizzle of olive oil
2 tsp of smoked paprika (if you have it)
1/2 teaspoon red pepper flakes
3 cloves garlic, grated
1 tablespoon lemon zest, grated
Pre-heat the oven to 425F or 220C. Place cauliflower on large baking sheet and drizzle with a good amount of olive oil, red pepper flakes, paprika, and s&p, mixing around until coated. Place in the oven for 20 minutes , then add garlic and lemon zest, mixing around and putting back in the oven for 10 minutes (or more) until charred.
Cook pasta following box instructions, drain and put back into pot, Add all remaining pasta ingredients with the heat on low, mixing until butter is melted and taste is to your liking, adding the greens last until wilted.
Serve charred cauliflower on top of pasta with an extra drizzle of olive oil if needed and enjoy warm!
