Chickpea Cookie Bites


Ingredients:


Wet:

1 can of rinsed chickpeas (*this option if you aren't using blender)

1/2 cup of natural PB

1/3 cup of maple syrup

1 mashed banana

5 dates OR 1/4 cup of sugar

2 tsp of vanilla


Dry:

1 cup of oats

1 tsp of baking soda

sprinkle of salt

1 cup of vegan chocolate chips


(*1 cup of chickpea flour + 1/2 cup of plant milk instead of canned chickpeas if you aren't using a blender/food processor)


Instructions:

Pre-heat oven to 350F.


Blend wet ingredients in a high powered blender or food processor. Add to a bowl with the dry ingredients and mix well adding chocolate chips last.


Roll into bite sized balls (sprinkle a little flour on your hand if they get too sticky) and place on a greased baking sheet. Bake for 10 min only so they are slightly brown but still soft/gooey on the inside. There's no eggs so eating them soft/undercooked is fine and delicious!
