Chia Oat & Blueberry Breakfast Muffins


Makes 12 muffins

Ingredients:

Dry:

  • 1 & 1/4 cup of oats

  • 1 cup of oat flour (or swap for all purpose flour)

  • 1/4 cup of chia seeds

  • 1 tsp of baking soda

  • 1 tsp baking powder

  • 1/2 tsp of salt

Wet:

  • 3 TBS of flax egg

  • 2/3 cup of maple syrup

  • 1/2 cup of melted coconut oil

  • 1/2 cup of plain vegan yogurt (or swap for apple sauce or 1 mashed banana)

  • Splash of any plant milk (if needed)

  • 1 cup of fresh or dried blueberries

Instructions:

Pre-heat oven to 200C or 400F


Mix wet ingredients first (leaving out berries) then add dry ingredients to the same bowl and mix together. Add your berries last and gently mix them in. Add a splash of any plant milk if needed. Pour into a greased (I used coconut oil) 12 muffin tray.


Bake for about 20 min or until knife comes out cleanly/almost cleanly.


Enjoy warm with a little vegan butter.
