Ingredients:
1 cup of all purpose flour (GF all purpose works too)
¾ cups of oat flour
1 tsp of baking soda
1 tsp of salt
1/2 tsp of cinnamon
1 cup (2 sticks) of of vegan butter slightly softened
3/4 cup of monk fruit sugar
1/2 cup of coconut sugar
2 tbsp of nondairy milk (I like soy milk)
1 tsp vanilla
1 1/2 cups of traditional oats
1 cup of diced strawberries
optional 1 cup of vegan chocolate chips
Instructions:
Preheat oven to 350F or 175C.
Mix your dry ingredients: flours, baking soda, salt, and cinnamon together in one bowl and set aside. In a separate bowl mix butter, sugar, milk, and vanilla- mixing until creamy (I used an electric mixer). Once creamy add your dry ingredients and continue to mix, slowly adding oats. Once fully mixed use a spoon or rubber spatula to gently fold in strawberries, Option to add chocolate chips too (I didn't here but I think next time I will for a chocolate covered strawberry taste). Roll into 1.5 inch balls (don't smash flat) and place on a greased baking tray.
Bake for 10-11 minutes and pull out to cool. They will look undercooked but let them cool for 15-20 minutes and they will become nice and chewy!
