7 Min Tomato Cream Sauce Fettuccine


Ingredients:

  • Any pasta of choice (I like fettuccine, spaghetti, or tagliatelle style)

  • *Optional jarred tomato sauce


Alfredo sauce:

  • 2 cups of raw cashews

  • 1 cup of nutritional yeast

  • 1/2 a small red onion

  • squeeze of 1/3 of a lemon

  • Generous salt to taste

  • *optional handful of basil if you want a pesto flavor

  • Water for blending


Instructions:

Boil pasta in a large pot following box instructions. Drain and put back into pot.

Blend all sauce ingredients in a high powered blender, slowly adding water until desired thickness. Pour desired amount of sauce over pasta and mix in. I like to add a little tomato sauce too but totally optional.


Enjoy warm in a bowl with a sprinkle of nutritional yeast or salt & pepper! Save extra sauce in the fridge- it will keep up to a week.
