15 Min Peanut Noodles



Ingredients:

1 package of Pad thai style rice noodles

1 head of broccoli

2 small sweet potatoes OR 3-4 carrots


For the sauce:

1 can of coconut milk

2 large spoonfuls of natural PB

1/2 cup of soy sauce

garlic powder to taste

1-2 TBS of maple syrup

siracha to taste (I usually do 2 big squirts)


*optional sesame seeds for garnish


Instructions:

Chop your carrots or sweet potatoes and remove broccoli florets. Boil a large pot of water and drop in your noodles and sweet potatoes/carrots. Cook for 5 min, drop broccoli florets in, and cook 5 more min. Drain water and put everything back in the pot.


In a small sauce pan over medium-low heat add all of your sauce ingredients. Whisk (or stir aggressively with fork) until smooth. Pour into large pot over the noodles and veggies. Mix until everything is covered in sauce.


Serve warm with optional sesame seeds!
