Sweet Potato Cauli Mash


*If cauliflower makes you bloat/uncomfortable only use half the head of cauliflower


Ingredients:

  • 3 medium sweet potatoes (I prefer skin on but also option to peel them)

  • 1 head of cauliflower

  • 1/2 cup of vegan butter

  • 3/4 cup of any plant milk (I like soy or almond)

  • Garlic powder to taste

  • S&p to taste

Optional garnish of any toasted nuts (I used pine nuts here)


Instructions:

Boil water in a large pot. Chop sweet potatoes into 1-2 inch cubes & pull cauliflower into florets. Put them in the boiling water together and cook until fully soft (about 15 min). Drain water and put back in the same pot on the stove at a low simmer just to keep them warm.


Add remaining ingredients. Either blend creamy with an immersion blender or mash/stir with a fork, adding garlic and salt & pepper to taste as you go or more milk if you like creamier.


Serve warm as a meal or as a side dish. I like garnishing with nuts toasted quickly on a pan for crunch.
