Easy 10 Min Quesadilla

Makes about 2 quesadillas*


Ingredients:

  • Any tortillas (I like corn but any kind/size works)

  • 2 medium sized sweet potatoes, chopped

  • 1 can of black beans, rinsed

  • 2 large handfuls of spinach *optional

  • 1/2 of 1 packet of taco seasoning

  • Vegan melty cheese (I like Violife shredded mozzarella or Follow Your Heart american slices)

  • *Optional mashed avocado or salsa for dipping

  • Vegan butter or oil for pan


Instructions:

*Boil water in a medium-large sized pot and drop chopped sweet potatoes in (I don't mind skin on but feel free to peel them if you want). Cook until soft about 10 min. Drain and set aside.

*option to do this ahead of time and just leave in your fridge for later


Grab two tortillas. Gently mash some of the cooked sweet potatoes on one tortilla. Sprinkle taco seasoning on top (about 1/4 of the packet). Pile a handful of black beans onto the sweet potatoes (or mash them into the other tortilla). Put a handful of spinach on, cover with vegan cheese, then top with the other tortilla.


Heat up a pan large enough to fit the quesadilla gently greased so it doesn't stick. Place in pan and cook about a few min per side until golden brown (You might need two spatulas to flip it). Serve warm, sliced in triangles, with option to dip in salsa or mashed avocado.
