No-Cook Veggie Burrito Bowl


Serves 1 person


Ingredients:

  • 1 packet of microwavable brown rice

  • 1 can of organic black beans (rinsed)

  • 1 handful of spinach or kale (roughly chopped or ripped with your hand)

  • A few cherry tomatoes (sliced in half)

  • 1/2 a yellow or orange bell pepper (chopped)

  • Avocado (sliced)

  • Hot sauce or sriracha

  • Vegan mayo or vegan ranch dressing

Instructions:

Microwave your packet of brown rice for 90 seconds and add it to a bowl with your spinach or kale. Rinse a large handful of canned black beans in your hand or with a strainer and add to bowl. Top with your tomatoes, pepper, and avocado. Drizzle with your favorite hot sauce and either vegan mayo (mixed and thinned with a little water) or my favorite vegan ranch dressing.
