2 sweet potatoes
optional parsley or rosemary for garnish
optional onion powder for garnish
Pre-heat oven to 400F or 200C. Slice parsnips and sweet potatoes into fry shapes and place them on a baking tray. Drizzle with olive oil and s&p and mix around. Put in the oven for 20 min.
Mix 2 tbsp of dijon mustard, 2 tbsp of maple syrup, and 1 tbsp of olive oil. Take parsnips and sweet potatoes out of the oven after 20 min and cover in the glaze, coating all pieces. Put back in oven for 10 more min. Serve warm with extra sprinkle of salt, onion powder, or garnish of rosemary or parsley.
