1-2 boxes of macaroni pasta cooked and cooled (regular or chickpea macaroni for more protein)
1 large red bell pepper, finely chopped
1/2 a medium red onion, finely chopped
3 celery sticks, chopped
1 cucumber, chopped
Large handful of basil, finely chopped
Large handful of parsley, finely chopped
2-3 dollops of vegan mayo (more to taste if necessary)
1 dollop of brown mustard (more to taste if necessary)
1 large dollop of sweet relish
Generous amounts of s&p to taste
*I like eating as a side with a Beyond meat burger or sausage
Boil water in a large pot for macaroni. While you wait, chop all the vegetable and herbs for the salad.
Cook the macaroni following box instructions. Drain and run cold water over to allow to cool.
Pour macaroni into a large mixing bowl and add all remaining ingredients, stirring thoroughly to make sure all macaroni is fully coated, tasting as you go.
Enjoy on a paper plate with a Beyond Meat burger or sausage.
