Avocado Peach Tomato Salad


Ingredients:

  • Tomatoes

  • Avocado

  • Ripe peach OR mango

  • red onion

  • *optional cooked & shaved ear of corn

  • chopped basil

  • s&p to taste

Instructions:

Chop all ingredients and add to bowl. Adding optional shaved corn and sprinkling well with s&p. Mix well. Add chunks of avocado last- right before it is served so it doesn't brown and don't over mix or it will get creamy.


Enjoy as a side or put it on some bread or chips!
