Apple Pie Bites

Ingredients:

  • 2 rolls of packaged pie dough (check for vegan ingredients)

  • Optional vegan vanilla ice cream for serving/dipping

Filling:

  • 4-5 apples, sliced thinly

  • 3 Tbsp of reg or GF all purpose flour

  • 1/2 cup of oats

  • 1/2 cup of sugar (I used coconut sugar)

  • 1/3 cup of melted vegan butter + a little for brushing

  • good generous sprinkle of cinnamon

  • sprinkle of nutmeg

  • squeeze of a large lemon wedge

  • optional sprinkle of hemp seeds

  • optional chopped pitted medjool dates (I like for their gooey sweetness but you could also add more sugar instead)

Instructions:

Pre-heat oven to 220C or about 425F.


Slice your apples (you can take the skin off too but I skip that step) and place them in a large bowl. Add your remaining filling ingredients, mixing well until all apples are coated.


Take dough out of package and let sit a few min to get closer to room temp, unrolled on top of a little flour. Find something in your kitchen that has a little longer than a finger length diameter to press into the dough to make circles with- I used the top of a coffee mug. Cut circles out of the dough and set them aside. Add filling mixture to each circle of dough and pick it up like a taco pinching well at the top to close in the mixture.


Place on two greased baking sheets and brush with a little vegan butter and additional sprinkle of cinnamon. Bake for 15-20 min or until dough starts to get slightly golden brown on the top. Eat warm with some vegan vanilla ice cream or I like to keep on the counter for a few days as a sweet snack to grab when I'm hungry.
